As many of you know, this summer I have been a huge fan of frozen soft serve for breakfast – the kind made with frozen fruit and whipped into a creamy almost sorbet like consistency. Some of my favorite flavors this summer have included Almond Butter Peach, Pure Cherry and Chocolate Cherry. Here is another recipe to keep you inspired.
You’ll find the recipe below along with some photos of the beautiful surf in Montauk brought by Hurricane Earl this past weekend. The storm passed through a bit lighter than expected bringing some rain, a bit of wind and definitely some rather exciting swell. I have never seen so many 30 year old boys together with smiles as big as 10 year olds. It was so fun. These are a few photos from the surf break, just south of the lighthouse in Montauk. Pear-Almond Soft Serve
Serving Size: 2, Makes 1 1/2 cups, ~230 calories per serving
Ingredients
2 sliced pears, frozen
2 tablespoons of almond butter (I recommend the crunchy kind)
1/4 cup of almond milk (Blue Diamond makes a nice one)
1 tablespoon sliced almonds (optional)
Directions
Place the pears, almond butter and almond milk into your food processor or high powered blender. Blend until creamy and thick. Serve in a bowl topped with sliced almonds on top.
